Tuna Melt Pie

I took Rachel Ray's Tuna Melt Pie recipe and modified it for our family's taste:

Ingredients:

1 tblsp olive oil
1 onion, finely chopped
8 florets of broccoli, chopped (you can also use chopped stems)
Four 5-ounce cans of tuna, drained
2 tblsp mayonnaise
1.5 cups of shredded cheddar cheese
3/4 cup milk
3 eggs
1/4 cup flour
2 tblsp butter, melted

Directions:
First, preheat the oven to 450 degrees. Then, heat olive oil in a large skillet, add the onions and stir until they are translucent. Add the chopped up broccoli and cook another 5-10 minutes, stirring occasionally to make sure nothing sticks to the pan.


In a large bowl, combine the tuna and mayo and mix together.


Then combine the onion/broccoli mixture as well as 2/3rds of the cheese. Mix well.


Then, in a small bowl, whisk together the milk, eggs, flour and butter. Stir that into the tuna mixture and transfer the entire thing to a 10 inch pie dish. Bake until browned - about 35 minutes. Top with the remaining cheese and broil until the cheese has melted.



My kids really enjoyed this meal and asked for seconds and thirds. Whew!

Monday's Tuna with Dill Sauce


This was pretty good. I found the recipe on allrecipes.com and had dill in the garden so I thought I'd try it. It wasn't nearly as good as the seared sashimi tuna we have made in the past, but it was good. I wish we hadn't used our sashimi grade tuna for it! Next time we'll know! The squash and salad were really good with Annie's Goddess Dressing though!!.

Seared Tuna with Avocado Tuesday


This is the best seared tuna ever! I think it should be sold in a restaurant near me! I made the sauce up early (because hubby gets home late) and it was all ready to go when he was ready to sear the tuna (which only takes a few minutes).

As for the potatoes, I just cut them up, mixed them with some olive oil, fresh rosemary and some S&P. Then I roasted them in the oven about 380 degrees for about 45 minutes.

The Best Tuna Waldorf Sandwich EVER!!


I made this Tuna Waldorf Sandwich last night and it turned out sooooo yummy! This will definitely be in my rotation! I didn't have sweet relish, so I minced about 1/4 of a pickle. I also didn't have walnuts, but almonds seemed to work just fine after I cut them up. We also whipped up a box of Annie's Penne Pasta with Alfredo Sauce and it made a very nice side.

Seared Tuna with Avocado


My hubby made this before the new year and it turned out soooo yummy!!! He seared some sashimi tuna, topped it with a cilantro/lime/ginger mixture, added avocado, and paired it with some rosemary potatoes. It was definitely a crowd pleaser... both of my boys asked for lots and lots more. We'll make 2 more filets next time!! Hubby found this on Simply Recipes.

Tuna Casserole and Birthday Dinner Wednesday



I whipped up some tuna casserole for the boys tonight (I split the recipe and made two small batches- one is in the freezer for a later meal). I'm hoping to be taken out to a Primizie birthday dinner by my hubby tonight!! Are you jealous of the gorgeous roses I got? Thought so!!



This is what I sent Chaz to school with today. Hope he eats it!!

Tuna Pea Wiggle on Bread Tuesday



Okay-- this definitely was a meal I remember from my early days. I'm not sure if it's exactly how mom made it or not, but it was comforting. Chaz hated the peas, but munched down on it when the peas were taken out. Cooper ate the entire thing and said "YUMMMMM" with every single bite!! This one goes down as one of the most frugal and quickest meals yet!!

Tuna Pea Wiggle

3 T. Margarine (I used butter)
3 T. Flour
dash of salt
1½ c. Milk
1 can Tuna, drained
1 can Peas, Drained

Melt butter, add flour, mix till pasty, add milk and stir constantly over medium heat until thicken and bubbling slightly, (do not bring to a rolling boil). Add the tuna and peas. Stirring constantly until bubbling.

Serve over toast or biscuits or saltine crackers.

I also felt like showing off Chaz's lunch box again. It's always so pretty with all the colors!! Unfortunately, it came home with most of the broccoli still in there. Amazingly, all the Oreos hadn't been eaten either! Very odd day at school... he must have been talking more than eating! At least he ate one of the PBJs and most of the watermelon.

Ginger Soy Tuna, Couscous, Green beans, and Carrot Sticks Monday

I found a Ginger-Soy Flank Steak recipe and tweaked it for tuna (since we had a lot of tuna in our fridge). It was pretty good... I may cut back on the rice vinegar next time, but it was still pretty good. We added curry couscous, canned green beans (ack- no one liked those), and some fresh carrot sticks. Lord knows I bought enough of them at Costco today... probably a 5 or 10 lb bag!!!

Pineapple Tuna Steak with Couscous Saturday

Garage sale today!! We actually ended up still making dinner for ourselves! We marinated some tuna steaks in pineapple, honey, soy sauce, and ginger. We shish-kabobed some pineapple and cooked up some curry couscous (that the boys loved).

Katie bought us some appetizers from Primizie as well as some yummy desserts.

Tuna Steak with Corn and Salad Tuesday


We marinated the tuna steak and cooked it like this:

INGREDIENTS (Nutrition)

  • 1/4 cup orange juice
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped fresh parsley
  • 1 clove garlic, minced
  • 1/2 teaspoon chopped fresh oregano
  • 1/2 teaspoon ground black pepper
  • 4 (4 ounce) tuna steaks

DIRECTIONS

  1. In a large non-reactive dish, mix together the orange juice, soy sauce, olive oil, lemon juice, parsley, garlic, oregano, and pepper. Place the tuna steaks in the marinade and turn to coat. Cover, and refrigerate for at least 30 minutes.
  2. Preheat grill for high heat.
  3. Lightly oil grill grate. Cook the tuna steaks for 5 to 6 minutes, then turn and baste with the marinade. Cook for an additional 5 minutes, or to desired doneness. Discard any remaining marinade.

We also made an oil and vinegar dressing for a mixed green salad with sesame sticks, walnuts, dried cranberries, and arugula. The corn on the cob was for dessert!

The boys had dinner earlier- scrambled eggs with cheese, carrot sticks, and lots of pretzely and cookie-type snacks.

Tuna Steak and Salsa with salad and potatoes Monday



We're grilling up some tuna steaks with a salsa to go on top- shredded carrots, chopped mango, chives, lime, cumin, and S&P. We'll grill some potatoes and also eat a salad.

The salad turned out awesome!! I added some spicy French dressing, capers, pine nuts, and cracked Ritz Crackers on top. So good with romaine lettuce!! The tuna turned out great too... I'll have to remember that one for sure! It was so easy too!!

Shrimp/Beef/Chicken/Tuna Fajitas Sunday

We went to my sister in law's house for a BBQ today. We had one of everything... shrimp, beef, chicken, and mahi mahi fajitas with corn on the cob, cole slaw, deviled eggs, chips and guac, and yummy upside down pineapple cake.

I've been free-loading for so long, I need to start thinking of a menu for next week!!
