The Best Tuna Waldorf Sandwich EVER!!
I made this Tuna Waldorf Sandwich last night and it turned out sooooo yummy! This will definitely be in my rotation! I didn't have sweet relish, so I minced about 1/4 of a pickle. I also didn't have walnuts, but almonds seemed to work just fine after I cut them up. We also whipped up a box of Annie's Penne Pasta with Alfredo Sauce and it made a very nice side.

Ode to my 2 Favorite Items
Pan Seared Salmon with Garlic Mashed Potatoes and Salad
I so wish I had taken a picture of this beautiful meal. I mashed up the garlicy potatoes while dad pan seared the salmon. He made his super yummy shallot salad dressing with oil, vinegar, and mustard as well.
Monday Lunch
Chaz wanted to make this lunch, but by the time it was lunch making time, he decided he'd rather sit on the couch and watch me make it. He did make 2 turkey sandwiches by himself this weekend though!
Super duper Omega-3 heavy duty organic bread from Costco, thin turkey, whole grain SunChips, Broccoli, Yogurt. Everything was eaten except the broccoli stem and one half of the crust from the sandwich.

Fish Fillets Italiano Friday
This was so super yummy! Instead of the spicy Thai Curry I had planned, I thought I'd make some Italian Tilapia. I found this on my spiffy new Allrecipes iPhone app - Spinner Dinner. This Fish Fillet Italiano was so easy and was very yummy (at least to the adults). I wish I could get my kids to eat it, but they were sticking their noses up to the tomatoes. The recipe called for cod, but the tilatpia tasted just fine in the sauce as well. Also, we didn't have olives, so we just omitted that part. This will definitely be put on my easy, semi-healthy meal rotation!

Wednesday Box
For dinner last night, we had some yummy grilled salmon, baked potatoes, and the perfect grilled squash (marinated in oil, balsamic vinegar, salt & pepper). It doesn't look very appetizing here, but I put 1/2 baked potato in the lunchbox for Wed. I've also included a turkey sandwich, jalapeno cheese puffs, cantaloupe and grapes.

Orange Lunch Tuesday
Fish Sticks, Sweet Potato Fries and PBJ Monday
We made this dinner thinking: 1. easy, 2. kids will like it, 3. baked fish is probably better than fried chicken nuggets, and 4. baked sweet potatoes are better than regular fries. The kids said the fries were disgusting and wouldn't even touch the fish sticks. They had PBJs. I am full from the fish sticks, but thought they (and the fries) were actually quite good.

Creamy Zucchini Pasta
I had a couple of zucchinis in the fridge, so I thought I'd search allrecipes for something to make with them. The result turned out very zesty! I thought it was going to be bland, but it turned out to be a spicy favorite. The recipe is for Creamy Zucchini Linguine but I used whole wheat spaghetti noodles instead. Hubby asked to make this again next week.
Seared Tuna with Avocado
My hubby made this before the new year and it turned out soooo yummy!!! He seared some sashimi tuna, topped it with a cilantro/lime/ginger mixture, added avocado, and paired it with some rosemary potatoes. It was definitely a crowd pleaser... both of my boys asked for lots and lots more. We'll make 2 more filets next time!! Hubby found this on Simply Recipes.
