Green Curry with Tilapia and Zucchini Tuesday


I made this a little too spicy again! I guess I need to add a lot less of the green curry paste. It still turned out good... I put it on rice noodles instead of rice this time. I think I like it that way a little better.

The boys had turkey and rice soup and chicken nuggets. Of course they were still hungry after they brushed their teeth. That's a nightly ritual around here.

I love these ravioli! Spinach and mozzarella, in the freezer, quick to cook and quick to eat. I threw together a romaine Caesar salad with toasted almonds and sunflower seeds.

Monday- Ravioli and Cesar Salad (after the Jingle Bell Ride, make enough for lunch)
Tuesday- Curry w/Zucchini, Tilapia and Noodles (Boys- Chicken Nuggets and Peanut Noodles)
Wednesday- Fish Sticks, Corn, Baked Kale
Thursday- Salmon Burger Pasta (make enough salmon for tomorrow)
Friday- Salmon Frittata and Stuffing
Saturday- On Vacation
Sunday- On Vacation

Lunches:

Monday- Turkey Soup, Veggie Wrap, Honey Dew, Grapes
Tuesday- Ravioli, Pineapple, Corn,
Wednesday-Ramen, Carrot Sticks, Yogo Balls
Thursday- Turkey Sandwich, Carrot Sticks, Honey Dew, Crackers
Friday- OFF from school

Cooper's Tuesday Lunch


This is what we're bringing with us today. Almond Butter and Jelly sandwich, carrots, grapes, and animal crackers

Grilled Shrimp and Mushroom Pasta Monday



This non-recipe turned out quite nicely! We sprinkled lemon pepper seasoning on them and grilled up the last 7 shrimp we had on Sunday night (at the same time we grilled our salmon burgers) and saved them for Monday's pasta. I got some mushrooms, sliced them, sauteed them in butter and a little bit of soy sauce, then added the whole wheat pasta (and a little olive oil). We heated up the shrimp in a pan and threw them on top of the pasta with some parsley. This recipe was so simple but it tasted really good!!

Wednesday Lunch for the boy


Pasta with zucchini, Bacon, Celery, JP+ Veggie Gummies, Biscuit

Sage and Shrimp Pasta with Zucchini Wednesday


Yum!! I forgot to put the corn in here... and I forgot to serve a salad, but it came out quite nice for such a fly by non-recipe!

3/4 box Cappelini Pasta
1 medium zucchini
7 sage leaves (2 chopped, 5 crisped in hot butter- yes!!)
10 medium shrimp (sauteed in more butter with lemon pepper spice)
1 cup chicken broth (or veggie broth and salt)
Lots of EVOO (Extra Virgin Olive Oil) on the noodles while they sat waiting for hubby to get home.

Once everything was cooked or sauteed, I threw it all together. It was quite yummy! The boys also had bacon.

Lentil/Carrot Soup and Biscuit Tuesday


I had a batch of frozen lentil soup and some frozen biscuits. It made tonight's meal super easy and actually pretty yummy! My 3 yo had seconds on the soup!

Lemongrass Shrimp Soup (and Alfredo Penne) Monday




This lemongrass soup was soooo good, but it burned my throat every time I inhaled to take a bite. I want more though! Yumm!! Of course, I had to make something different for the boys... no way would I put them through that heat torture just yet. They had some Aunt Annie's Penne Pasta with Alredo sauce.
