Penang Curry Friday

The kids had some nice rice with carrots and cauliflower (boiled in chicken broth).

Mom and dad had penang (red) spicy curry with rice, squash, carrots, cauliflower, and onions.
We had yummy sticky rice with mango for dessert! Yum!!

Also, check out what the boys did to their breakfast watermelon. Yes, those are sweet tarts.

Ravioli and Bread Thursday


The boys will be eating this with their aunt tonight. It's the yummiest ravioli ever. Get it at Costco in the frozen section.

I'm sure we'll be heating up some whole wheat bread and possibly tossing some carrots into the mix.

Chocolate Mess Crockpot Cake and ice cream for dessert!!

1 package chocolate cake mix

1 pint sour cream

1 small package instant chocolate pudding

1 small bag chocolate chips

3/4 cup oil

4 eggs

1 cup water

Spray crockpot with non-stick spray. Mix all ingredients. Pour into crockpot.

Cook on low for 4-5 hours.

Serve in a bowl with ice cream.

Bocca Burgers and Cilantro Celery Salad Wednesday

So hubby will grill the Bocca Burgers on the grill... with cheese and fresh onions on top. I'm going to attempt a cilantro celery salad (because I have those things in abundance in my fridge). I think I'll make it somewhat like this:

Several celery stalks cut up in small bite size pieces
Very thinly sliced onion strips
Cilantro leaves, sliced
Balsamic Vinegar, Mustard, Agave Nectar, Olive Oil, S&P
Possibly some homemade croutons

It doesn't look all that great, but it's pretty good!!

Salmon Cakes and Celery Tuesday


For the salmon cakes, I used this recipe from allrecipes.com:

* 1 (14.75 ounce) can salmon, drained and flaked
* 1 small onion, minced (I grated it)
* 1 egg
* 1/2 cup bread crumbs
* 1 tablespoon Worcestershire sauce
* 1/8 teaspoon hot pepper sauce
* 1/4 teaspoon ground black pepper
* 1/4 cup shredded Cheddar cheese
* 2 tablespoons chopped fresh parsley
* 2 tablespoons all-purpose flour for coating (I forgot this step!)
* 1/4 cup butter (I used 4 very small pats on the cookie sheet)
* 3 tablespoons olive oil (I didn't use this either)


DIRECTIONS

1. Combine salmon, onion, egg, bread crumbs, Worcestershire sauce, hot pepper sauce, black pepper, cheese and parsley; mix well. Shape into four patties. Dust lightly with flour. Chill for 20 minutes.
2. In a large skillet heat butter and olive oil over medium high heat. Cook the patties until browned on both sides, about 10 minutes. Drain briefly on paper towels before serving.

I cooked these in the oven--- 380 degrees/ 20 minutes per side. I made smaller cakes, so actually cooked them a bit shorter.

I also made a spicy mustard dipping sauce: 1 tablespoon spicy mustard, 2 tablespoons of mayo, a few squirts of pepper sauce.

Served with celery stalks. Yum!!

Bison, Potatoes and Cheese Monday

Hubby bought the bison steak at the farmer's market... very choice piece!! He grilled it outside... nicely done! We split it up between 4 of us (well, really only 3 of us ate any). He also rolled the potatoes in olive oil and kosher salt and grilled those. All I had to do was put a pat of butter on and grate some cheddar on top!

My 5 year old LOVED it!

May 26 - June 1 Menu

I had this changed up a little because our gas got turned off yesterday and we couldn't make curry like planned. So here is what our menus look like for this week:

Dinner menu:
Monday: Bison Steak, Potatoes and Cheese
Tuesday: Salmon Cakes, Spicy Mustard Sauce, Celery
Wednesday: Bocca Burgers with Onions and Cheese, Cilantro Celery Salad
Thursday: Ravioli and Bread for the kids (mom and dad going out)
Friday: Penang Curry with Rice, Carrots, Celery, Green Onions, Bell Peppers (kids will have carrots and coconut rice with lentils).
Saturday: Tom Yum Soup with Shrimp (or Shrimp Scampi for kids)
Sunday: Bison Burgers, Grilled Onions, and Squash

Lunch menu:
Monday: Cheese omelette and Vege Wrap (at the wine festival)
Tuesday: PBJ, Butter/Garlic Penne Noodles with Basil (leftovers)
Wednesday: Grilled cheese (with tomatoes and salmon cake for mom)
Thursday: Tuna and Crackers (maybe a banana, peanut butter, honey sandwich too)
Friday: Basil and Tuna Pesto Pasta (picnic lunch)
