This recipe for 
Stuffed Bell Peppers looked interesting (and we had all the ingredients) so we gave it a try.  I cooked the ground bison halfway through on the stove top, as I didn't have an hour for it to sit cooking in the oven.  The stuffing turned out really yummy.  I think we may make it and stuff tortillas with it next time.  It makes a nice picadillo for tacos.
